Air-fried Chicken Schnitzel

Schnitzel is such a quintessential fried dish originating from Vienna, one of my most loved cities in the world. Vienna, the capital of Austria, is one of Europe’s oldest and arguably most beautiful cities, and for all those classical music aficionados,  it is the haunting ground of Mozart and Beethoven.

For those interested in psychoanalysis, Vienna has also been the home of Sigmund Freud for a whopping 47 years. I did pay a special visit to the Sigmund Freud Museum while I was in Vienna (January 2019). He resided at Verggasse 19 in Vienna’s 9th district, from 1891 to 1938. It was from this house that he set off for exile in England with his family on 4 June 1938 to escape from the National Socialists.

And what is Vienna without mentioning the Belvedere. This is one of Vienna’s most iconic palace complexes and I lined up for an hour to tour the largest collection of Klimt paintings.  And yes, I have a photo of me with his famous painting, The Kiss. 

I definitely recall having a lot of veal schnitzels during my trip in Austria (Dec 2018 -Jan 2019) – oh….how much I miss Vienna!

Air-fried Chicken Schnitzel

Ingredients

  • 1 skinless chicken breast
  • 1/2 cup of bread crumbs
  • salt and pepper to season
  • 1/4 teaspoon grated nutmeg
  • 1 egg whole, fresh

Instructions

  1. Cut chicken breast in half.
  2. Layer piece of cling film on top and then flatten the chicken breast with a mallet or heavy cast iron skillet.
  3. Beat the egg in a bowl and add a pinch of salt, pepper and nutmeg. Have another large shallow dish filled with bread crumbs ready. Dip the chicken breast into the egg yolk.
  4. Now transfer the chicken to the bread crumb dish and coat generously all over till both sides are covered.
  5. Transfer the coated chicken to the air fryer and set it at 200C / 390F. Heat for 11 minutes.
  6. Once time is up, take out chicken breast and serve with mustard or lemon juice.
