Avocado Toast with Soft Boiled Egg

This is my version of the millennial avocado toast (and daily consumption of the above is also why I probably can’t afford a luxury property). Yes, avocado is hip and healthy and having it served on a quality sourdough is probably one of my favourite ways to start my day (along with a good oat milk flat white).

To start, you will need a quality sourdough and a ripe avocado. For the soft boiled egg, simply boil a pot of water till a rolling boil and using a slotted spoon, transfer the egg to the water and let it simmer for 6 minutes. Using a slotted spoon, remove the egg into a bowl of cold water so that it cools down and is easy to peel.

For aesthetic appeal, I personally like to thinly slice my avocado. But for those who fancy the smashed avocado, go ahead and mush it up with some salt and lime juice. For the “X-factor”, I have garnished the avocado toast with a sprinkling of sea salt and Aleppo chilli flakes; and if that is not enough, a small sprinkle of roasted black sesame seeds too for the extra colour juxtaposition.

Have this once a week as a treat or daily if you fancy. Because the egg is packed with protein, you can even have it for dinner. One simply cannot go wrong.

Avocado Toast with Soft Boiled Egg

PREP TIME: 10 mins | COOK TIME: 6 mins | TOTAL TIME: 16 min | YIELDS: 1 serving

INGREDIENTS:

  • Sourdough or rustic bread, thickly sliced.
  • 1 small avocado
  • Pinch of sea salt flakes
  • Pinch of Aleppo pepper (or red chilli flakes if you don’t have)
  • Pinch of black sesame seeds
  • 1 egg

METHOD:

  1. Boil a pot of water (enough to cover the egg). Once water reaches boiling point, transfer the egg inside with a slotted spoon. Turn down heat to a simmer and let the egg stand in the boiling water for 6 minutes. Using the slotted spoon, transfer the egg to a small bowl of cold water and let it sit for a minute or two till until it is cool enough to handle.
  2. Meanwhile, build the toast. Toast or grill the sourdough slice. Cut the avocado in half and remove the pit and skin. Using a sharp knife, gently slice the avocado and spread it over the toast evenly. Peel the egg and cut the egg yolk gently with a knife so that the yolk oozes. Sprinkle the toast with the sesame seed, salt and aleppo chilli flakes before serving.
